Chateau de Laubade goes to great lengths to make certain Blanche Armagnac retains its natural fruit flavor and floral bouquet by keeping the alcoholic fermentation at a low level rather than quickening the process. The Blanche Armagnac varies a little in that it is aged, but in stainless steel vats for three or four months rather than oak barrels. The essence of the Blanche Armagnac is similar to Grappa. There is of course the undertone of grapes within, but with a musty, earthiness to it. There is definite peach nectar taste in the finish. Chateau de Laubade has not only created an extraordinary Blanche Armagnac, but also some very unusual cocktails to highlight the remarkable flavors of this earthy spirit.
